APPLE AND CINNAMON PANCAKES

Ingredients

1 granny smith apple, grated

3 pitted dates, diced

2 eggs, lightly beaten

2 tablespoons coconut flour

½ teaspoon vanilla bean extract with seeds

¼ gluten-free baking powder

¼ teaspoon cinnamon

Method

Sift the coconut flour, baking powder and cinnamon together, then place in a small bowl and add remaining ingredients. Stir with a wooden spoon until evenly combined.

Meanwhile preheat a skillet on medium heat and lightly grease with a little butter on a piece of paper towel, then place heaped tablespoons of mixture into the skillet. Brown on both sides, then serve with pure maple syrup and a good dollop of Greek yogurt with a dusting of cinnamon.
