APPLE AND PEAR MUFFINS
Makes 14 muffins
2¼ cups almond meal
2 teaspoons baking powder
2 teaspoons cacao powder
1 teaspoon ground cinnamon
1 teaspoon vanilla bean extract
½ cup walnuts, chopped
2 tablespoons natural peanut butter
3 tablespoons honey
¼ cup coconut oil, melted
4 extra large eggs, lightly beaten
1 large red apple, diced
1 pear, diced
4 teaspoons coconut sugar
4 pieces Lindt 85% dark chocolate or similar size chocolate pieces
Preheat the oven to 180ºC (350ºF). Place muffin papers into muffin tray.
Place all dry ingredients except the coconut sugar into a large bowl and mix together until evenly combined. Then add the vanilla bean essence, walnuts, peanut butter, honey, coconut oil, beaten eggs, apple and pear and mix until evenly combined.
Place a heaped tablespoon into each muffin paper and place into the oven to bake for approximately 25 minutes. Remove from the oven and while still warm sprinkle ¼ teaspoon of coconut sugar over each muffin, then place a ¼ piece of dark chocolate into the middle of each muffin.
