CREAMED RICE PUDDING
½ cup basmati rice
½ cup water
1 L full fat milk
1 ½ tablespoons raw sugar
1 teaspoon vanilla essence
1 egg, well beaten
In a saucepan, bring rice and water to the boil on medium heat. Gradually add milk, sugar and vanilla essence and simmer for 30 minutes on low heat.
Stir occasionally to prevent rice catching on saucepan base. Add more milk if rice has thickened too much.
While still hot add the beaten egg and stir until combined.
You may like to top with a banana or berries or whatever other fruit you prefer.
