5 extra large eggs

½ cup zucchini, grated 

¼ cup leek, finely sliced

¼ cup corn kernels

¼ cup capsicum, diced

10 cherry tomatoes, halved

1 ½ cups baby spinach leaves

½ cup cheese, grated

½ cup self-raising flour

1½ cups milk

1½ teaspoons dried dill leaves


Preheat the oven to 180ºC (350ºF). Grease a rectangular 26cm x 17cm oven safe dish with a little olive oil.

Beat eggs and milk together in a large bowl until combined, then add the remaining ingredients, mix well. Pour into prepared oven safe dish and bake for 45-50 minutes or until firm to touch.
