HONEY SOY CHICKEN AND VEGETABLE ONE TRAY BAKE
500g lean chicken breast, chopped
4 cups of roughly chopped vegetables (e.g. cauliflower, broccoli, carrot, onion, capsicum, zucchini)
¼ cup natural cashews
1 ½ tablespoons pure honey
2 tablespoons extra virgin olive oil
2 tablespoons salt-reduced soy sauce or tamari sauce (gluten-free)
Preheat the oven to 180ºC (350ºF). Line a baking tray with baking paper.
Place chicken and vegetables onto the baking tray.
Mix olive oil, honey and soy sauce together, and then pour over chicken and vegetables.
Place in the oven and bake for approximately 40 minutes or until chicken is cooked.
Serve with cooked soba noodles, brown rice or quinoa.
