CHICKEN AND VEGETABLE SOUP

Serves 4

Ingredients

4 chicken thighs, skin off, diced

1 small onion, finely diced

1 medium carrot, finely diced

2-3 bok choy, sliced

½ cup corn kernels, frozen or fresh

1 garlic clove, crushed

1 small tomato, diced

2 cups salt-reduced liquid chicken stock

Cracked salt and pepper


Directions

Place all ingredients in a large pot on medium heat. Season with cracked salt and pepper, bring to boil and then turn down to low heat and simmer for 30 minutes or until chicken is cooked through.
