BALSAMIC BEAN SALAD

Serves 2

Ingredients

1 X 440 gram can beans, drained and rinsed (bean mix/chickpeas/black beans), or cooled beans you have cooked

½ cucumber, diced

1 tomato, roughly chopped

½ red onion, finely diced

2 tablespoons balsamic vinegar

3 tablespoons extra-virgin olive oil

1 tablespoon fresh mint

1 tablespoon flat leaf parsley

Pinch of salt and pepper


Directions

Place the beans, cucumber, tomato, onion, vinegar, olive oil, herbs, salt and pepper in a deep bowl and mix together well.

Serve with your choice of animal protein (e.g. lean chicken or beef, and fish).
