SOURDOUGH BREAD AND BUTTER PUDDING
3 extra large eggs
600 mL milk
2 tablespoons honey
1 teaspoon vanilla
1 tablespoon sultanas
¼ teaspoon nutmeg
3-4 pieces sourdough bread
1 teaspoon butter
Preheat the oven to 160ºC (320ºF). Lightly grease a round 23cm x 6cm pie dish.
Beat the eggs milk, honey and vanilla until combined. Gently pour into the pie dish.
Spread the butter evenly over sourdough bread and cut into triangles. Arrange on top of the egg custard mixture, making sure the bread is saturated with mixture. Add sultanas and sprinkle over nutmeg.
Stand in a deep baking dish that is half filled with water and bake in the oven for approximately one hour or until set.
