NUTTY RICE PUFF BARS

Ingredients

¾ cup puffed rice – Abundant Earth brand

¼ cup almonds, roughly chopped

¼ cup walnuts, roughly chopped

¼ cup cashews, roughly chopped

¼ cup whole pistachios

¼ cup sultanas

¼ cup dates, roughly chopped

2 eggs, lightly beaten

1 tablespoon salt-reduced butter

1 teaspoon cinnamon

⅓ cup brown rice flour

1 ½ tablespoons fine brown sugar

Directions

Preheat oven to 160ºC (320ºF). Line a 20cm square baking tin with baking paper.

Place all the ingredients together in a large bowl and stir with a wooden spoon until fully combined.

Press into prepared baking tin. Bake for 20 minutes or until firm and golden in colour. Cut into bars.
