CHOCOLATE PROTEIN BALLS
1 cup almond meal
¼ cup cannellini beans, drained and rinsed
¼ cup natural cacoa powder
3 tablespoons organic natural peanut butter, no added salt or sugar
3 tablespoons honey
1 teaspoon vanilla bean extract with seeds
Place cannellini beans in a large bowl and mash with a vegetable masher until smooth in texture.
Add the remaining ingredients and stir until mixture comes together.
Use a heaped teaspoon of the mixture and roll in the palms of your hands until a smooth ball is formed.
Roll balls in desiccated coconut or hulled hemp seeds.
Place in a sealed container and store in the fridge.
