CHOCOLATE APPLE MUFFINS
1 cup apple, skin off, grated
4 tablespoons organic coconut flour
4 tablespoons organic cacao powder
2 tablespoons baking powder
1 tablespoon baking soda
4 tablespoons organic rice malt syrup
1 tablespoons vanilla bean extract with seeds
4 tablespoons 85% dark chocolate, chopped
2 tablespoons extra virgin olive oil
Preheat the oven to 180ºC (350ºF).
Sift all dry ingredients together.
Add remaining ingredients and fold together until evenly combined.
Spoon batter into muffin papers and bake for 20 minutes or until cake mixture bounces back up after lightly touching the centre of the muffin.
