CHICKEN NOODLE SALAD

Serves 4

Ingredients

250g vermicelli rice noodles, cooked as per packet instructions

250g cooked lean chicken breast, shredded

2 cups baby spinach leaves

2 Lebanese cucumbers, seeds removed, diced

2 carrots, finely diced

250g cherry tomatoes, halved

125g snow pea sprouts or other sprouts

½ cup fresh corn kernels

½ cup fresh mint, chopped

½ cup fresh coriander, chopped

½ cup fresh basil leaves, chopped

Dressing:

1 large red chilli, seeds removed, finely diced

1 garlic clove, crushed

1 tablespoon raw brown sugar

1 tablespoon fish sauce

¼ cup lime juice

Directions

Place all ingredients in a bowl and toss.
