ASIAN INSPIRED CHICKEN & VEGETABLE ONE TRAY BAKE
1 kg free range chicken thigh fillets, diced
2 cups red cabbage, roughly chopped
2 cups Savoy cabbage, roughly chopped
2 cups broccoli florets
2 cups cauliflower florets
1 red or white onion, quartered
½ red capsicum, roughly chopped
½ yellow capsicum, roughly chopped
4 tablespoons extra virgin olive oil
4 tablespoons kecap manis (sweet soy sauce)
4 tablespoons honey
Preheat the oven to 180ºC (350ºF). Line a deep baking tray with baking paper.
Mix all ingredients together in a deep baking tray, and bake for approximately 45-50 minutes or until chicken and vegetables are cooked to your liking. Serve with cooked brown rice or any other whole grains you prefer.
