2 EGG OMELETTE
2 eggs, beaten
¼ cup grated zucchini
4 olive tomatoes, halved
1 tablespoon leek, finely diced
2 tablespoons capsicum, diced
1 cup baby spinach leaves
1 mushroom, sliced
1 tablespoon extra-virgin olive oil
Cracked salt and pepper
Preheat frypan on medium heat with olive oil.
Add all ingredients, except eggs, and cook for 3 minutes. Turn down to low heat, then add beaten egg and cook with a lid on until egg is firm.
